- 1 cup heavy cream
- 8 oz semi-sweet or dark chocolate, chopped
- 1/2 cup granulated sugar
- 2 tablespoons water
- 1/4 cup heavy cream (for caramel)
- 2 tablespoons unsalted butter
- Pinch of salt
- 12 soft cookies or shortbread rounds (for assembling sandwiches)
Instructions
- To make ganache, heat 1 cup heavy cream in a saucepan over medium heat until it just begins to simmer.
- Remove from heat and pour over chopped chocolate in a bowl. Let sit for 2 minutes, then stir until smooth. Set aside to cool and thicken slightly.
- For the caramel, in a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves, then stop stirring and let it simmer until it turns golden brown.
- Carefully add 1/4 cup heavy cream and butter to the caramel (it will bubble). Stir until smooth, then add a pinch of salt. Let cool slightly.
- To assemble, spread a layer of ganache on the flat side of one cookie, then a layer of caramel. Top with another cookie to form a sandwich.
- Repeat with remaining cookies. Chill for 10–15 minutes to set, or enjoy immediately.
Notes
- Use store-bought soft cookies or bake your own for a homemade touch.
- Let the ganache and caramel cool slightly to avoid overly runny fillings.
- Sprinkle a bit of sea salt over the caramel for a salted caramel twist.
