Description

  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup sour cream or plain yogurt
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup powdered sugar
  • Chocolate curls or shavings, for topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease a rectangular baking dish or cake pan.
  2. In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Combine the dry ingredients with the wet mixture, alternating with milk and sour cream, mixing until just combined.
  6. Pour the batter into the prepared pan and bake for 35–40 minutes or until a toothpick inserted comes out clean.
  7. Allow the cake to cool completely, at least 1 hour, before layering.
  8. To make the fudge layer, heat heavy cream until just simmering and pour over chopped semi-sweet chocolate. Stir until smooth and let cool slightly to thicken.
  9. Spread the fudge evenly over the cooled cake.
  10. Top with whipped cream and sprinkle with chocolate shavings or curls.
  11. Chill the cake before serving to set the layers.
