Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. Add eggs, buttermilk, oil, and vanilla extract to the dry ingredients and mix until well combined.
  4. Stir in boiling water until the batter is smooth.
  5. Divide the batter evenly among cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cupcakes cool completely on a wire rack.
  8. For the ganache, heat the heavy cream in a saucepan until simmering.

  11. For the crumble, mix 1/4 cup flour, 2 tablespoons cocoa powder, 2 tablespoons sugar, and melted butter until crumbly.
  12. Sprinkle the crumble over the ganache-topped cupcakes.
