- 1 cup chopped dried cherries
- 1 cup chopped pecans
- 1 1/2 cups semi-sweet chocolate chips (for coating)
- 1/2 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 tablespoon unsalted butter
- Pinch of salt
Instructions
- In a medium bowl, mix together the chopped cherries, chopped pecans, sweetened condensed milk, vanilla extract, almond extract (if using), butter, and salt until well combined.
- Chill the mixture in the refrigerator for 30 minutes to firm up.
- Using a small cookie scoop or your hands, roll the mixture into small balls and place on a parchment-lined baking sheet.
- Freeze the truffles for 20–30 minutes to make dipping easier.
- In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until smooth.
- Dip each chilled truffle into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined tray.
- Chill the coated truffles in the refrigerator until the chocolate is set, about 15 minutes.
- Store in an airtight container in the fridge for up to 1 week.
Notes
- Use dark chocolate or white chocolate for a different twist.
- Sprinkle sea salt or drizzle extra chocolate on top before setting for decoration.
- Make sure the filling is cold before dipping to prevent it from falling apart.
- Truffles can be frozen for up to 2 months.
