Description

These Chocolate-Covered Cherry Pecan Truffles are indulgent bite-sized treats made with chopped cherries, crunchy pecans, and rich chocolate coating. Perfect for holidays or special occasions.


Ingredients

  • 1 cup chopped dried cherries
  • 1 cup chopped pecans
  • 1 1/2 cups semi-sweet chocolate chips (for coating)
  • 1/2 cup sweetened condensed milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1 tablespoon unsalted butter
  • Pinch of salt

Instructions

  1. In a medium bowl, mix together the chopped cherries, chopped pecans, sweetened condensed milk, vanilla extract, almond extract (if using), butter, and salt until well combined.
  2. Chill the mixture in the refrigerator for 30 minutes to firm up.
  3. Using a small cookie scoop or your hands, roll the mixture into small balls and place on a parchment-lined baking sheet.
  4. Freeze the truffles for 20–30 minutes to make dipping easier.
  5. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until smooth.
  6. Dip each chilled truffle into the melted chocolate, allowing excess to drip off. Place back on the parchment-lined tray.
  7. Chill the coated truffles in the refrigerator until the chocolate is set, about 15 minutes.
  8. Store in an airtight container in the fridge for up to 1 week.

Notes

  • Use dark chocolate or white chocolate for a different twist.
  • Sprinkle sea salt or drizzle extra chocolate on top before setting for decoration.
  • Make sure the filling is cold before dipping to prevent it from falling apart.
  • Truffles can be frozen for up to 2 months.
