Description

Ingredients

  • 1/2 cup melted coconut oil or unsalted butter
  • 2/3 cup coconut sugar or brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3/4 cup dark chocolate chips
  • 1/2 cup chopped pecans
  • 1/4 cup unsweetened shredded coconut (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oats, flour, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together melted coconut oil and sugar until smooth.
  4. Add eggs and vanilla extract to the wet mixture and mix well.
  5. Combine wet and dry ingredients, stirring just until a dough forms.
  6. Fold in chocolate chips, chopped pecans, and shredded coconut if using.
  7. Scoop rounded tablespoons of dough onto the baking sheet, spacing them 2 inches apart.
  8. Bake for 10–12 minutes or until the edges are golden brown.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use certified gluten-free oats and flour blend to make it gluten-free.
  • Replace pecans with walnuts, almonds, or sunflower seeds if needed.
