- 1 1/4 cups all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1 egg yolk
- 2–3 tablespoons cold water
- 3/4 cup heavy cream
- 8 oz dark chocolate, chopped
- 1 teaspoon vanilla extract
- 2 cups fresh cherries, pitted (or canned/pitted if out of season)
- 2 tablespoons cherry jam or glaze (optional, for finishing)
Instructions
- Combine flour and powdered sugar in a bowl. Cut in butter until the mixture resembles coarse crumbs.
- Add egg yolk and cold water, mixing just until a dough forms.
- Press the dough into a 9-inch tart pan. Chill for 30 minutes.
- Preheat oven to 350°F (175°C). Bake the tart shell for 20–25 minutes or until golden. Let cool completely.
- Heat heavy cream until just boiling. Pour over chopped chocolate and let sit for 1–2 minutes, then stir until smooth. Add vanilla extract.
- Pour ganache into the cooled tart shell and smooth the top. Chill for at least 2 hours or until set.
- Arrange cherries on top of the set ganache. Optionally brush with warmed cherry jam or glaze for a glossy finish.
- Slice and serve chilled or allow to come to room temperature before serving.
