Description

Ingredients

  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 egg yolk
  • 23 tablespoons cold water
  • 3/4 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 1 teaspoon vanilla extract
  • 2 cups fresh cherries, pitted (or canned/pitted if out of season)
  • 2 tablespoons cherry jam or glaze (optional, for finishing)

Instructions

  1. Combine flour and powdered sugar in a bowl. Cut in butter until the mixture resembles coarse crumbs.
  2. Add egg yolk and cold water, mixing just until a dough forms.
  3. Press the dough into a 9-inch tart pan. Chill for 30 minutes.
  4. Preheat oven to 350°F (175°C). Bake the tart shell for 20–25 minutes or until golden. Let cool completely.
  5. Heat heavy cream until just boiling. Pour over chopped chocolate and let sit for 1–2 minutes, then stir until smooth. Add vanilla extract.
  6. Pour ganache into the cooled tart shell and smooth the top. Chill for at least 2 hours or until set.
  7. Arrange cherries on top of the set ganache. Optionally brush with warmed cherry jam or glaze for a glossy finish.
  8. Slice and serve chilled or allow to come to room temperature before serving.
