- 1 cup heavy cream
- 8 oz dark or semi-sweet chocolate, chopped

- 1 tsp vanilla extract
- 2 cups fresh or jarred cherries, pitted
- 2 tbsp cherry jam or glaze (optional)
- Shaved chocolate, for garnish
Instructions
- Prebake the tart shell according to package or recipe instructions if using raw pastry. Let it cool completely.
- In a saucepan, heat heavy cream until just simmering. Pour over chopped chocolate in a heatproof bowl.
- Let sit for 2 minutes, then stir until smooth. Stir in butter and vanilla extract until fully combined.
- Pour the chocolate ganache into the cooled tart shell and spread evenly.
- Let the ganache set at room temperature for 1 hour, then refrigerate for 2 more hours until firm.
- Top with pitted cherries. If desired, lightly glaze the cherries with warmed cherry jam.
- Garnish with shaved chocolate before serving.

- Use fresh cherries for best flavor and appearance; thawed frozen cherries also work.
- To prevent a soggy crust, brush the baked shell with melted chocolate before adding ganache.
