Description

Chocolate Cherry Tart is a sophisticated dessert featuring a crisp pastry shell filled with smooth dark chocolate ganache and topped with sweet, juicy cherries, offering a perfect balance of richness and tartness.

Ingredients

Units Scale
  • 1 sweet pastry tart shell (store-bought or homemade)
  • 1 cup heavy cream
  • 8 oz dark or semi-sweet chocolate, chopped
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 2 cups fresh or jarred cherries, pitted
  • 2 tbsp cherry jam or glaze (optional)
  • Shaved chocolate, for garnish

Instructions

  1. Prebake the tart shell according to package or recipe instructions if using raw pastry. Let it cool completely.
  2. In a saucepan, heat heavy cream until just simmering. Pour over chopped chocolate in a heatproof bowl.
  3. Let sit for 2 minutes, then stir until smooth. Stir in butter and vanilla extract until fully combined.
  4. Pour the chocolate ganache into the cooled tart shell and spread evenly.
  5. Let the ganache set at room temperature for 1 hour, then refrigerate for 2 more hours until firm.
  6. Top with pitted cherries. If desired, lightly glaze the cherries with warmed cherry jam.
  7. Garnish with shaved chocolate before serving.

Notes

  • Use fresh cherries for best flavor and appearance; thawed frozen cherries also work.
  • To prevent a soggy crust, brush the baked shell with melted chocolate before adding ganache.
  • For extra depth, add a splash of Kirsch or Amaretto to the ganache.
  • Make a day ahead and store chilled for best results.
  • A chocolate cookie crust is a great alternative to a pastry shell.
