- 1/4 cup unsalted butter
- 1/4 cup maraschino cherry juice
- 1 teaspoon vanilla extract
- 1/2 cup finely chopped maraschino cherries
- 2 cups melting chocolate or candy coating
- Optional: sprinkles or cocoa powder for garnish
Instructions
- In a small saucepan, heat heavy cream and butter over medium heat until just simmering.
- Pour the hot cream mixture over the semi-sweet chocolate chips in a heatproof bowl and let sit for 2 minutes.
- Stir until smooth, then mix in cherry juice, vanilla extract, and chopped maraschino cherries.
- Cover and refrigerate the mixture for at least 2 hours or until firm enough to scoop.
- Using a small scoop or spoon, form the mixture into bite-sized balls and place on a parchment-lined baking sheet.
- Freeze truffles for 30 minutes to firm them up.
- Melt the candy coating or melting chocolate in a microwave-safe bowl in 30-second increments, stirring between each until smooth.
- Dip each chilled truffle into the melted chocolate, shaking off excess, and place back on the parchment paper.
- Decorate with sprinkles or a dusting of cocoa powder if desired.
- Allow chocolate to set completely before serving or storing.
Notes
- For a stronger cherry flavor, increase cherry juice to 1/3 cup and reduce cream slightly.
- Store truffles in an airtight container in the refrigerator for up to 2 weeks.
