Scale
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup heavy cream
- 1 tsp vanilla extract
- Pinch of salt
- 2 cups chocolate chips or melting wafers (for coating)
- Optional: sprinkles, sea salt, or crushed nuts for garnish
Instructions
- In a large bowl, beat the softened butter until smooth and creamy.
- Add powdered sugar, cocoa powder, heavy cream, vanilla extract, and salt. Mix until a smooth, thick buttercream forms.
- Chill the buttercream in the refrigerator for about 30 minutes until firm enough to handle.
- Using a small cookie scoop or spoon, portion and roll the buttercream into 1-inch balls. Place on a parchment-lined baking sheet.
- Freeze the buttercream balls for 20–30 minutes.
- Melt the chocolate chips or wafers in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.
- Dip each buttercream ball into the melted chocolate, letting excess drip off, then return to the parchment paper.
- Sprinkle with optional toppings before the coating sets. Let the chocolate harden completely at room temperature or in the fridge.
Notes
- Use high-quality chocolate for the smoothest coating.
- Truffles can be made ahead and stored in the fridge or freezer.
- If the buttercream becomes too soft while rolling, refrigerate again briefly.
- Try flavoring the buttercream with espresso powder, mint extract, or orange zest for variations.
