For the Cake:
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 3/4 cup buttermilk
- 1/2 cup hot coffee
For the Cherry Filling:
- 1 1/2 cups cherry pie filling
For the Chocolate Ganache:
- 1 cup heavy cream
- 1 1/2 cups dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and grease two 8-inch cake pans.
- In a bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add oil, eggs, vanilla, and buttermilk. Mix well.
- Stir in hot coffee until smooth.
- Pour batter into cake pans and bake for 30-35 minutes.
- Let cakes cool completely.
- Heat heavy cream and pour over chocolate chips. Stir until smooth.
- Assemble cake by spreading cherry filling between the layers.
- Pour ganache over the cake and let it set.
