Description
A flavorful chicken quesadilla filled with tender seasoned chicken, sweet caramelised onions, melted cheese, and fresh herbs—crispy on the outside and deliciously melty on the inside.

- 2 tbsp olive oil
- 1 large onion, thinly sliced
- 2 cups cooked shredded chicken
- 1 tbsp butter
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded mozzarella or Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 2 tbsp chopped fresh herbs (parsley, cilantro, or basil)
- 4 large flour tortillas
Instructions
- Heat olive oil in a skillet over medium heat. Add the sliced onions and cook slowly for 10–15 minutes until golden and caramelised. Set aside.
- In the same pan, melt butter and add shredded chicken, paprika, garlic powder, salt, and pepper. Cook for 2–3 minutes to warm and season.
- Assemble each quesadilla by sprinkling cheese on half of a tortilla, then adding chicken, caramelised onions, and herbs. Top with more cheese and fold over.
- Heat a clean skillet over medium heat and cook each quesadilla for 2–3 minutes per side until the tortilla is crisp and the cheese is melted.
- Slice into wedges and serve warm.
Notes
- For extra flavor, add a spoonful of BBQ sauce or chipotle mayo inside the quesadilla.
- Use a mix of cheeses for the best melt and flavor.
- Leftover roasted chicken works perfectly for this recipe.
