Description

Hearty and comforting Chicken Noodle Soup made with tender chicken, egg noodles, and vegetables in a flavorful broth. A perfect cold-weather classic.


Ingredients

  • 2 chicken breasts or thighs, cooked and shredded

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 onion, diced

  • 2 garlic cloves, minced

  • 8 cups chicken broth

  • 1 tsp thyme

  • 6 oz egg noodles

  • Salt and pepper, to taste

 


Instructions

  • Sauté onions, carrots, and celery. Add garlic.

  • Pour in chicken broth and bring to a boil.

  • Add noodles and cook until tender.

  • Stir in shredded chicken and thyme.

 

  • Simmer 10 mins and season to taste.


Notes

  • Use rotisserie chicken for a shortcut.

 

  • Add lemon juice for brightness.
