- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour (for dredging)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 oz cremini or white mushrooms, sliced
- 2 cloves garlic, minced
- 3/4 cup Marsala wine
- 3/4 cup chicken broth
- 1/3 cup heavy cream (optional for a creamier sauce)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Place chicken breasts between two sheets of plastic wrap and pound to even thickness if needed.
- Mix flour, salt, and pepper in a shallow dish. Dredge each chicken breast in the mixture, shaking off excess.
- Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add chicken and cook 4–5 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add the remaining butter. Add mushrooms and sauté until browned and tender, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Pour in Marsala wine and bring to a simmer, scraping up any browned bits from the bottom.
- Add chicken broth and simmer for 8–10 minutes until the sauce reduces slightly. Stir in cream if using, and simmer for another 2 minutes.
- Return chicken to the skillet and simmer in the sauce for 5 minutes, spooning sauce over the top.
- Garnish with fresh parsley and serve hot over mashed potatoes, pasta, or rice.

- Use dry Marsala wine for a less sweet, more savory flavor.
- Substitute chicken thighs if preferred, adjusting cooking time as needed.
- The dish pairs well with garlic bread or steamed green beans.
