Description

These homemade chicken gyros are packed with Mediterranean flavors! Juicy, marinated grilled chicken, fresh veggies, and creamy tzatziki sauce are wrapped in warm pita bread for an irresistible meal. Perfect for lunch, dinner, or meal prep!

For the Chicken Marinade

  • 1 1/2 lbs boneless, skinless chicken thighs or breasts
  • 3 tbsp olive oil
  • 2 tbsp Greek yogurt
  • 3 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 small cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp fresh dill, chopped
  • 1/2 tsp salt

For Assembling the Gyros

  • 46 pita breads
  • 1 small red onion, thinly sliced
  • 1 tomato, diced

Instructions

  1. Marinate the Chicken – In a bowl, mix olive oil, Greek yogurt, garlic, lemon juice, vinegar, and spices. Add chicken and coat well. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best flavor).
  2. Make the Tzatziki Sauce – In a small bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt. Stir well and refrigerate until serving.
  3. Grill the Chicken – Heat a grill or skillet over medium-high heat. Cook chicken for about 5-6 minutes per side until fully cooked. Let rest for a few minutes, then slice thinly.
  4. Warm the Pita – Heat pita bread in a dry skillet or wrap in foil and warm in the oven.
  5. Assemble the Gyros – Place sliced chicken on pita, top with red onion, tomato, lettuce, and a generous drizzle of tzatziki sauce. Garnish with parsley.
  6. Serve & Enjoy!

Notes

  • Use chicken thighs for juicier gyros, but chicken breasts work well too!
  • Let the chicken marinate longer for deeper flavors.
  • Warm pita bread before assembling for the best texture.
