For the Chicken Marinade
- 1 1/2 lbs boneless, skinless chicken thighs or breasts
- 3 tbsp olive oil
- 2 tbsp Greek yogurt
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
For the Tzatziki Sauce
- 1 cup Greek yogurt
- 1 small cucumber, grated and drained
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 tsp fresh dill, chopped
- 1/2 tsp salt
For Assembling the Gyros
- 4–6 pita breads
- 1 small red onion, thinly sliced
- 1 tomato, diced

- 1 small red onion, thinly sliced
- 1 tomato, diced
- 1 cup lettuce, shredded
- Fresh parsley for garnish

Instructions
- Marinate the Chicken – In a bowl, mix olive oil, Greek yogurt, garlic, lemon juice, vinegar, and spices. Add chicken and coat well. Cover and refrigerate for at least 30 minutes (or up to 4 hours for best flavor).
- Make the Tzatziki Sauce – In a small bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, dill, and salt. Stir well and refrigerate until serving.
- Grill the Chicken – Heat a grill or skillet over medium-high heat. Cook chicken for about 5-6 minutes per side until fully cooked. Let rest for a few minutes, then slice thinly.
- Warm the Pita – Heat pita bread in a dry skillet or wrap in foil and warm in the oven.
- Assemble the Gyros – Place sliced chicken on pita, top with red onion, tomato, lettuce, and a generous drizzle of tzatziki sauce. Garnish with parsley.

Notes
- Use chicken thighs for juicier gyros, but chicken breasts work well too!
- Let the chicken marinate longer for deeper flavors.
- Warm pita bread before assembling for the best texture.
