- 500g boneless, skinless chicken breasts or thighs
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 white or red onion
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp lime juice
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- Corn or flour tortillas
- Optional toppings: sour cream, shredded cheese, salsa, guacamole, fresh cilantro
Instructions
- Slice chicken, bell peppers, and onion into thin strips.
- In a bowl, mix lime juice, olive oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper to create the marinade.
- Add chicken to the marinade and refrigerate for at least 30 minutes.
- Heat a large skillet or cast-iron pan over medium-high heat.
- Cook the marinated chicken until browned and cooked through, about 6–8 minutes. Remove from pan and set aside.
- In the same pan, sauté peppers and onion until tender-crisp, about 5–7 minutes.
- Return chicken to the pan, toss to combine, and cook for 1–2 more minutes.
- Serve hot with warm tortillas and desired toppings.
Notes
- Use steak or shrimp instead of chicken for variety.
- Add mushrooms or zucchini for extra vegetables.
- Spice it up with sliced jalapeños or cayenne pepper.
- For a low-carb version, serve over lettuce or cauliflower rice.
- Keep tortillas separate during storage to prevent sogginess.
