Description

Chicken fajitas are a sizzling Tex-Mex favorite made with marinated strips of chicken, bell peppers, and onions cooked to perfection and served with warm tortillas and your favorite toppings.


Ingredients

  • 500g boneless, skinless chicken breasts or thighs
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 white or red onion
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Corn or flour tortillas
  • Optional toppings: sour cream, shredded cheese, salsa, guacamole, fresh cilantro

Instructions

  1. Slice chicken, bell peppers, and onion into thin strips.
  2. In a bowl, mix lime juice, olive oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper to create the marinade.
  3. Add chicken to the marinade and refrigerate for at least 30 minutes.
  4. Heat a large skillet or cast-iron pan over medium-high heat.
  5. Cook the marinated chicken until browned and cooked through, about 6–8 minutes. Remove from pan and set aside.
  6. In the same pan, sauté peppers and onion until tender-crisp, about 5–7 minutes.
  7. Return chicken to the pan, toss to combine, and cook for 1–2 more minutes.
  8. Serve hot with warm tortillas and desired toppings.

Notes

  • Use steak or shrimp instead of chicken for variety.
  • Add mushrooms or zucchini for extra vegetables.
  • Spice it up with sliced jalapeños or cayenne pepper.
  • For a low-carb version, serve over lettuce or cauliflower rice.
  • Keep tortillas separate during storage to prevent sogginess.
