Description

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup heavy cream (or milk)

For the Toppings:

  • 1 cup fresh strawberries, sliced
  • 1/2 cup blueberries or raspberries
  • 2 tbsp powdered sugar (for dusting)
  • 1/4 cup maple syrup or honey (optional)

Instructions

  • Prepare the Crepe Batter:
    • In a blender, combine flour, eggs, milk, water, melted butter, sugar, vanilla, and salt. Blend until smooth.
    • Let the batter rest for 10-15 minutes.
  • Cook the Crepes:
    • Heat a non-stick pan over medium heat and lightly grease with butter.
    • Pour 1/4 cup batter into the pan, swirling to spread evenly.
    • Cook for about 1 minute, then flip and cook for another 30 seconds.
    • Repeat until all crepes are cooked.
  • Make the Cream Cheese Filling:
    • In a bowl, mix softened cream cheese, powdered sugar, vanilla, and heavy cream until smooth.
  • Assemble the Crepes:
    • Spread a layer of cream cheese filling on each crepe.
    • Fold or roll the crepes and top with fresh strawberries, blueberries, and a dusting of powdered sugar.
    • Drizzle with maple syrup or honey if desired.
