- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/4 cup heavy cream (or milk)
For the Toppings:
- 1 cup fresh strawberries, sliced
- 1/2 cup blueberries or raspberries
- 2 tbsp powdered sugar (for dusting)
- 1/4 cup maple syrup or honey (optional)
Instructions
- Prepare the Crepe Batter:
- In a blender, combine flour, eggs, milk, water, melted butter, sugar, vanilla, and salt. Blend until smooth.
- Let the batter rest for 10-15 minutes.
- Cook the Crepes:
- Heat a non-stick pan over medium heat and lightly grease with butter.
- Pour 1/4 cup batter into the pan, swirling to spread evenly.
- Cook for about 1 minute, then flip and cook for another 30 seconds.
- Repeat until all crepes are cooked.
- Make the Cream Cheese Filling:
- In a bowl, mix softened cream cheese, powdered sugar, vanilla, and heavy cream until smooth.
- Assemble the Crepes:
- Spread a layer of cream cheese filling on each crepe.
- Fold or roll the crepes and top with fresh strawberries, blueberries, and a dusting of powdered sugar.
- Drizzle with maple syrup or honey if desired.
