- For the crust:
- 1 1/2 cups graham cracker crumbs or digestive biscuits
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- For the filling:
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3/4 cup sour cream or Greek yogurt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup chopped pistachios (optional)
- For the topping:
- 1 cup cherry pie filling or cherry compote
- 1/3 cup whole roasted pistachios (shelled)
Instructions
- Preheat oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper and lightly grease the sides.
- Combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of the pan and bake for 10 minutes. Let cool.
- In a large bowl, beat cream cheese until smooth. Add sugar and beat until well combined.
- Beat in eggs one at a time. Add sour cream (or yogurt) and vanilla extract and mix until smooth.
- Optional: Fold in chopped pistachios for extra texture.
- Pour filling over cooled crust and smooth the top.
- Bake for 50–60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours, preferably overnight, until fully set.
- Before serving, spoon cherry filling over the top and garnish with whole pistachios.

- Let cheesecake sit at room temperature for 15 minutes before slicing for easier cuts.
- Use a water bath during baking to reduce cracking.
