- Prepare the Crust:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until evenly combined.
- Press the mixture firmly into the bottom of an 8×8-inch baking dish lined with parchment paper.
- Bake for 8-10 minutes, then set aside to cool completely.
- Make the Fudge Layer:
- In a microwave-safe bowl, combine semi-sweet chocolate chips and sweetened condensed milk. Microwave in 20-second intervals, stirring after each, until the mixture is smooth.
- Stir in the vanilla extract and pour the fudge mixture over the cooled crust, spreading it evenly.
- Add the Marshmallow Cherry Layer:
- In a medium bowl, mix mini marshmallows, chopped maraschino cherries, and white chocolate chips (if using). Spread the mixture evenly over the fudge layer, pressing lightly so it sticks.
- Chill the Bars:
- Refrigerate the bars for at least 2 hours or until firm.
- Slice and Serve:
- Once chilled, slice into bars. Garnish with grated chocolate or cherry halves if desired. Serve chilled or at room temperature.
