For the Marshmallow Cherry Layer:

  • 1 cup mini marshmallows
  • 1 cup maraschino cherries, chopped and drained
  • 1/2 cup white chocolate chips (optional, for added creaminess)

  • Grated chocolate
  • Cherry halves

Instructions

  1. Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until evenly combined.
    • Press the mixture firmly into the bottom of an 8×8-inch baking dish lined with parchment paper.
    • Bake for 8-10 minutes, then set aside to cool completely.
  2. Make the Fudge Layer:
    • In a microwave-safe bowl, combine semi-sweet chocolate chips and sweetened condensed milk. Microwave in 20-second intervals, stirring after each, until the mixture is smooth.
    • Stir in the vanilla extract and pour the fudge mixture over the cooled crust, spreading it evenly.
  3. Add the Marshmallow Cherry Layer:
    • In a medium bowl, mix mini marshmallows, chopped maraschino cherries, and white chocolate chips (if using). Spread the mixture evenly over the fudge layer, pressing lightly so it sticks.
  4. Chill the Bars:
    • Refrigerate the bars for at least 2 hours or until firm.
  5. Slice and Serve:
    • Once chilled, slice into bars. Garnish with grated chocolate or cherry halves if desired. Serve chilled or at room temperature.

  • Ensure the maraschino cherries are well-drained to prevent excess moisture in the bars.
  • For a nutty twist, sprinkle chopped pecans or almonds over the fudge layer before adding the marshmallow cherry layer.
