Description

Cherry Berry Crumble Bars are fruity, buttery dessert squares with a juicy cherry-berry filling and a golden oat crumble topping. Perfect for summer treats, potlucks, or cozy desserts year-round.


Ingredients

  • 1 1/2 cups old-fashioned oats
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups pitted cherries (fresh or frozen)
  • 1 1/2 cups mixed berries (blueberries, raspberries, blackberries)
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar (for fruit)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, combine flour, oats, brown sugar, 1/4 cup granulated sugar, baking powder, and salt.
  3. Stir in melted butter and vanilla extract until crumbly and evenly moistened.
  4. Press two-thirds of the mixture into the bottom of the prepared pan to form the crust.
  5. In a separate bowl, toss cherries and mixed berries with cornstarch, lemon juice, and 2 tablespoons of sugar.
  6. Spread the fruit mixture evenly over the crust layer.
  7. Sprinkle the remaining crumble mixture over the fruit.
  8. Bake for 40–45 minutes, or until golden and bubbly.
  9. Let the bars cool completely in the pan before cutting into squares.

  • Use gluten-free flour and oats for a gluten-free version.
