- 1 1/2 cups all-purpose flour
- 1 1/2 cups old-fashioned oats
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups pitted cherries (fresh or frozen)
- 1 1/2 cups mixed berries (blueberries, raspberries, blackberries)
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar (for fruit)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
- In a large bowl, combine flour, oats, brown sugar, 1/4 cup granulated sugar, baking powder, and salt.
- Stir in melted butter and vanilla extract until crumbly and evenly moistened.
- Press two-thirds of the mixture into the bottom of the prepared pan to form the crust.
- In a separate bowl, toss cherries and mixed berries with cornstarch, lemon juice, and 2 tablespoons of sugar.
- Spread the fruit mixture evenly over the crust layer.
- Sprinkle the remaining crumble mixture over the fruit.
- Bake for 40–45 minutes, or until golden and bubbly.
- Let the bars cool completely in the pan before cutting into squares.

- Add nuts or coconut to the crumble for extra texture and flavor.
- Use gluten-free flour and oats for a gluten-free version.
- Let bars chill for 1–2 hours for clean slicing.
