Description

Cherry Bars are a buttery, cake-like dessert layered with sweet cherry filling and optionally topped with white chocolate chips. Perfect for gatherings, holidays, or everyday indulgence.

Ingredients

Units Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 can (21 oz) cherry pie filling or 2 cups pitted cherries (fresh or canned)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. Spread about two-thirds of the batter evenly into the prepared pan.
  7. Spoon cherry filling evenly over the batter.
  8. Drop spoonfuls of the remaining batter on top of the cherries.
  9. Sprinkle white chocolate chips over the top if desired.
  10. Bake for 30–35 minutes or until golden and a toothpick inserted comes out clean.
  11. Cool completely in the pan before slicing into bars.

Notes

  • Use lemon zest for a citrusy twist that complements the cherries.
  • Swap white chocolate chips with dark or semi-sweet chips for a richer flavor.
  • Store at room temperature for 3 days or refrigerate for up to a week.
  • These bars freeze well for up to 2 months; thaw before serving.
  • Use a sharp knife and chill before cutting for clean slices.
