- 2 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 can (21 oz) cherry pie filling or 2 cups pitted cherries (fresh or canned)
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper or lightly grease it.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Spread about two-thirds of the batter evenly into the prepared pan.
- Spoon cherry filling evenly over the batter.
- Drop spoonfuls of the remaining batter on top of the cherries.
- Sprinkle white chocolate chips over the top if desired.
- Bake for 30–35 minutes or until golden and a toothpick inserted comes out clean.
- Cool completely in the pan before slicing into bars.
Notes
- Use lemon zest for a citrusy twist that complements the cherries.
- Swap white chocolate chips with dark or semi-sweet chips for a richer flavor.
- Store at room temperature for 3 days or refrigerate for up to a week.
- These bars freeze well for up to 2 months; thaw before serving.
