Description
Cherry Almond Snowball Cookies are tender, buttery holiday treats made with finely chopped almonds and maraschino cherries. These melt-in-your-mouth cookies are rolled in powdered sugar for a festive, snowy finish.
Ingredients
Scale
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar (plus extra for rolling)
- 2 tsp almond extract
- 2 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1/2 cup maraschino cherries, finely chopped and patted dry
- 1/2 cup finely chopped almonds
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and 1/2 cup powdered sugar until light and fluffy.
- Mix in the almond extract until well combined.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Fold in the chopped maraschino cherries and almonds until evenly distributed.
- Roll the dough into 1-inch balls and place on the prepared baking sheet.
- Bake for 12–14 minutes, or until the bottoms are lightly golden (tops will not brown much).
- Let cookies cool for 5 minutes, then roll warm cookies in powdered sugar.
- Once completely cooled, roll the cookies again in powdered sugar for a snowy effect.
Notes
- Dry cherries thoroughly to prevent excess moisture in the dough.
- Store in an airtight container at room temperature for up to one week.
- Great make-ahead option for holiday cookie trays or gift boxes.
