    • 8 oz rotini pasta
    • 1 lb ground beef
    • 1 (1 oz) packet taco seasoning
    • 1/2 cup water
    • 1 1/2 cups salsa (mild, medium, or spicy)
    • 2 cups shredded Mexican cheese blend (divided)

Instructions

  • Cook the Pasta:
    • Bring a pot of salted water to a boil. Cook the rotini pasta according to the package directions until al dente. Reserve ½ cup of pasta water, drain, and set aside.
  • Cook the Beef:
    • In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess grease.
  • Season the Beef:
    • Add the taco seasoning and ½ cup water to the cooked beef. Stir and simmer for 2–3 minutes, allowing the flavors to meld.
  • Combine Pasta and Salsa:
    • Add the cooked pasta and salsa to the skillet with the beef. Stir to combine.
  • Add Cheese:
    • Stir in 1½ cups of shredded cheese until melted and creamy. Adjust consistency with reserved pasta water if needed.
  • Top and Serve:
    • Sprinkle the remaining ½ cup of cheese over the top. Cover with a lid for 1–2 minutes to allow the cheese to melt. Serve hot and enjoy!

Notes

  • Spice Level: Adjust the heat by using mild, medium, or hot salsa, or add diced jalapeños for extra spice.
  • Optional Add-Ins: Stir in black beans, corn, or diced bell peppers for added texture and flavor.
  • Make It Creamier: Add ¼ cup of sour cream or cream cheese for an even richer sauce.
