- 8 oz rotini pasta
- 1 lb ground beef
- 1 (1 oz) packet taco seasoning
- 1/2 cup water
- 1 1/2 cups salsa (mild, medium, or spicy)
- 2 cups shredded Mexican cheese blend (divided)
Instructions
- Cook the Pasta:
- Bring a pot of salted water to a boil. Cook the rotini pasta according to the package directions until al dente. Reserve ½ cup of pasta water, drain, and set aside.
- Cook the Beef:
- In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Drain any excess grease.
- Season the Beef:
- Add the taco seasoning and ½ cup water to the cooked beef. Stir and simmer for 2–3 minutes, allowing the flavors to meld.
- Combine Pasta and Salsa:
- Add the cooked pasta and salsa to the skillet with the beef. Stir to combine.
- Add Cheese:
- Stir in 1½ cups of shredded cheese until melted and creamy. Adjust consistency with reserved pasta water if needed.
- Top and Serve:
- Sprinkle the remaining ½ cup of cheese over the top. Cover with a lid for 1–2 minutes to allow the cheese to melt. Serve hot and enjoy!

- Spice Level: Adjust the heat by using mild, medium, or hot salsa, or add diced jalapeños for extra spice.
- Optional Add-Ins: Stir in black beans, corn, or diced bell peppers for added texture and flavor.
