- 1 large loaf of crusty bread (like sourdough or Italian), cut into thick slices or squares
- 2 cups mushrooms, finely chopped
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup chopped onions
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp thyme (optional)
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add onions and cook until translucent, about 2–3 minutes.
- Add garlic and mushrooms, then season with salt, pepper, and thyme. Cook until mushrooms release moisture and begin to brown, about 5–7 minutes. Let cool slightly.
- In a bowl, mix the mushroom mixture with cream cheese, mozzarella, and Parmesan until well combined.
- Cut out the centers of the bread squares, creating shallow pockets, being careful not to cut through the bottom.
- Fill each bread square with the cheesy mushroom mixture and place on a baking tray.
- Bake for 10–12 minutes, or until cheese is melted and tops are golden.
- Garnish with chopped parsley and serve warm.
Notes
- Use a mix of mushrooms like cremini and shiitake for deeper flavor.
- You can make the filling ahead and store it in the fridge for up to 2 days.
- Add a pinch of red pepper flakes for a spicy kick.
