Description

Cheesy Mashed Potato Patties are crispy on the outside and soft and cheesy on the inside, made from leftover mashed potatoes mixed with cheese and herbs, then pan-fried to golden perfection.


Ingredients

  • 2 cups mashed potatoes (preferably chilled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/4 cup all-purpose flour (plus more for coating)
  • 2 tablespoons chopped green onions or chives
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil or butter (for frying)

Instructions

  1. In a large bowl, combine mashed potatoes, cheddar cheese, Parmesan, egg, flour, green onions, salt, and pepper. Mix until well combined.
  2. Form the mixture into small patties, about 1/2 inch thick.
  3. Lightly coat each patty with additional flour to help with browning and crispiness.
  4. Heat oil or butter in a large skillet over medium heat.
  5. Fry the patties for 3–4 minutes on each side, or until golden brown and crispy.
  6. Transfer to a paper towel-lined plate to drain excess oil.
  7. Serve warm, optionally with sour cream or dipping sauce.

Notes

  • Great way to use leftover mashed potatoes.
  • You can add cooked bacon bits or herbs for variation.
  • Substitute gluten-free flour for a gluten-free version.
