			- 4 boneless, skinless chicken breasts
 - 2 tbsp olive oil or melted butter
 - 2 cloves garlic, minced
 - 1 tsp Dijon mustard (optional)
 - 2 tbsp fresh parsley, chopped
 - 1 tsp dried oregano
 - 1 tsp dried thyme or Italian seasoning
 - 1/2 cup grated Parmesan cheese
 - 1 cup shredded mozzarella or cheddar cheese
 - 1 cup panko breadcrumbs
 - Salt and black pepper, to taste
 
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
 - Pound chicken breasts to even thickness. Season with salt and pepper.
 - In a small bowl, mix olive oil or melted butter with garlic and Dijon mustard (if using).
 - In a separate bowl, combine panko breadcrumbs, Parmesan, oregano, thyme, parsley, and a pinch of salt and pepper.
 - Brush chicken with the garlic mixture, then press each piece into the breadcrumb-herb mixture to coat thoroughly.
 - Place coated chicken breasts in the prepared baking dish. Top each with shredded cheese.
 - Bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
 - Optional: Broil for 2–3 minutes to brown and crisp the top.
 - Let rest for 5 minutes before serving.
