  • 2 1/2 cups (310g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold and diced
  • 1/2 cup (120ml) cold water

For the Filling:

  • 1 1/2 cups shredded mozzarella cheese (or your favorite cheese blend)
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • Optional: diced ham or cooked bacon

For Frying/Baking:

  • 1 egg, beaten (for egg wash, if baking)
  • Oil for frying (if frying)

Optional Garnish:

  • Fresh parsley, chopped

Instructions

  1. Make the Dough:
    • In a bowl, mix flour and salt. Add the cold butter and work it into the flour with your fingers or a pastry cutter until crumbly. Gradually add water and knead into a smooth dough. Wrap in plastic and refrigerate for 30 minutes.
  2. Prepare the Filling:
    • In a bowl, mix mozzarella, Parmesan, garlic powder, oregano, and optional diced ham or bacon.
  3. Assemble the Empanadas:
    • Roll out the dough on a floured surface and cut into 4–5 inch circles.
    • Place 1–2 tablespoons of filling in the center of each circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork.
  4. Cook the Empanadas:
    • To Fry: Heat oil in a deep pan over medium heat. Fry empanadas in batches until golden brown, about 2–3 minutes per side. Drain on paper towels.
    • To Bake: Preheat oven to 375°F (190°C). Place empanadas on a baking sheet lined with parchment paper. Brush with egg wash and bake for 20–25 minutes, or until golden brown.
  5. Serve:
    • Garnish with chopped parsley and serve warm. Enjoy on their own or with a dipping sauce like marinara or spicy aioli.

Notes

  • For extra crispiness, chill assembled empanadas for 15 minutes before frying or baking.
  • Experiment with fillings—add sautéed onions, spinach, or even cooked chicken for variety.
