Description

Ingredients

  • 2 everything bagels, halved
  • 2 eggs
  • 2 slices cheddar or preferred cheese
  • 4 slices fresh tomato
  • 1 tbsp butter or oil
  • Salt and pepper to taste

Instructions

  1. Lightly toast the bagel halves in a toaster or under the broiler until golden.
  2. In a non-stick skillet over medium heat, melt butter or heat oil. Crack the eggs into the skillet, season with salt and pepper, and cook to your preferred doneness (sunny-side-up or over-easy).
  3. Place a slice of cheese on the bottom half of each toasted bagel. Top with the hot egg to melt the cheese slightly.
