- 2 cups cooked chicken, shredded or diced
- 1 tablespoon olive oil
- 1 bell pepper, diced
- 1 small zucchini, diced
- 1/2 onion, chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup salsa
- 4 large flour tortillas
- 1/4 cup chopped fresh cilantro (optional)
- Sour cream or guacamole for serving (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add onion, bell pepper, and zucchini. Cook for 5–6 minutes until vegetables are tender.
- Add the cooked chicken, cumin, chili powder, salt, and pepper. Stir and cook for another 2–3 minutes until heated through.
- Stir in salsa and cook for 1 more minute, then remove from heat.
- Warm the tortillas in a microwave or skillet for easier folding.
- Divide the chicken and veggie mixture evenly among the tortillas.
- Sprinkle cheese and optional cilantro over the filling.
- Fold in the sides and roll up each tortilla to form burritos.
- Optional: Place burritos seam-side down in a hot skillet or on a grill for 1–2 minutes per side until golden and the cheese is melted.
- Serve hot with sour cream or guacamole if desired.

- Use rotisserie chicken for a faster prep.
- Customize with corn, black beans, or spinach.
