- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 cup white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 2 cups chicken broth
- 1.5 cups shredded cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Chopped fresh parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine uncooked white rice, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well.
- Pour the mixture into a greased baking dish.
- Nestle the raw chicken pieces into the rice mixture.
- Cover tightly with foil and bake for 45 minutes.
- Remove from oven, uncover, and sprinkle shredded cheese evenly over the top.
- Return to the oven, uncovered, and bake an additional 10-15 minutes until cheese is melted and bubbly, and chicken is cooked through.
- Garnish with chopped parsley before serving.
