Description

This Cheesy Chicken and Rice Casserole is a creamy, comforting one-dish meal featuring tender chicken, seasoned rice, and gooey melted cheese—perfect for busy weeknights or family dinners.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 cup white rice (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1.5 cups shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine uncooked white rice, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Mix well.
  3. Pour the mixture into a greased baking dish.
  4. Nestle the raw chicken pieces into the rice mixture.
  5. Cover tightly with foil and bake for 45 minutes.
  6. Remove from oven, uncover, and sprinkle shredded cheese evenly over the top.
  7. Return to the oven, uncovered, and bake an additional 10-15 minutes until cheese is melted and bubbly, and chicken is cooked through.
  8. Garnish with chopped parsley before serving.
