Description

Cheesy baked squash rounds are a quick, savory side dish made with yellow squash and melty cheese. Healthy, low-carb, and ready in 20 minutes!


Ingredients

  • 2 yellow squashes, sliced

  • 1 cup shredded mozzarella or cheddar

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • Fresh parsley or thyme for garnish

Instructions:

  1. Preheat oven to 400°F.

  2. Arrange squash slices on a baking sheet.

  3. Sprinkle with garlic powder, salt, and pepper.

  4. Top each round with cheese.

  5. Bake for 12-15 mins until golden and bubbly.
