For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 packet fajita seasoning mix (or homemade, see below)
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
- Juice of 1 lime
- Fresh cilantro, chopped (optional for garnish)
Homemade Fajita Seasoning (Optional):
- 1 tbsp chili powder
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional for heat)
Instructions
- Preheat Oven: Set to 375°F (190°C).
- Season Chicken: Rub chicken breasts with olive oil and fajita seasoning, ensuring they are fully coated.
- Sauté Veggies: Heat 1 tbsp olive oil in a skillet over medium-high heat. Sauté sliced bell peppers and onions until tender and slightly caramelized (5-7 minutes). Remove from heat.
- Assemble Dish: Place seasoned chicken in a baking dish. Top each piece with an even layer of sautéed vegetables, then sprinkle with shredded cheese.
- Bake: Bake for 20–25 minutes or until chicken is fully cooked (internal temperature reaches 165°F/75°C).
- Garnish: Squeeze lime juice over the chicken and garnish with fresh cilantro. Serve immediately.
