Description

This Cheesy Baked Fajita Chicken is packed with bold fajita flavors, colorful sautéed veggies, and gooey melted cheese. A perfect one-dish dinner for busy weeknights!

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 packet fajita seasoning mix (or homemade, see below)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • Juice of 1 lime
  • Fresh cilantro, chopped (optional for garnish)

Homemade Fajita Seasoning (Optional):

  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional for heat)

Instructions

  • Preheat Oven: Set to 375°F (190°C).
  • Season Chicken: Rub chicken breasts with olive oil and fajita seasoning, ensuring they are fully coated.
  • Sauté Veggies: Heat 1 tbsp olive oil in a skillet over medium-high heat. Sauté sliced bell peppers and onions until tender and slightly caramelized (5-7 minutes). Remove from heat.
  • Assemble Dish: Place seasoned chicken in a baking dish. Top each piece with an even layer of sautéed vegetables, then sprinkle with shredded cheese.
  • Bake: Bake for 20–25 minutes or until chicken is fully cooked (internal temperature reaches 165°F/75°C).
  • Garnish: Squeeze lime juice over the chicken and garnish with fresh cilantro. Serve immediately.

Notes
