Description

Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley or chives
  • Optional toppings: sour cream, green onions, bacon bits

Instructions

  1. Scrub and dry the potatoes. Pierce each potato a few times with a fork.
  2. Rub the potatoes with olive oil, then season with salt, pepper, and garlic powder.
  3. Place potatoes in the air fryer basket. Air fry at 400°F (200°C) for 35–40 minutes, turning once, until the skin is crispy and a knife easily pierces through the center.
  4. Remove from air fryer and carefully slice each potato open lengthwise. Fluff the insides with a fork.
  5. Sprinkle shredded cheese inside each potato and return to the air fryer for 2–3 minutes until the cheese is melted.
  6. Top with fresh herbs and any desired toppings before serving.
