- 1 lb ground beef
- 4 oz cheddar cheese, cut into small cubes
- 1/2 cup onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1 egg
- 1 tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the glaze:
- 1/4 cup ketchup
- 1 tbsp brown sugar
- 1 tsp mustard
- For the gravy:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 1/2 cups beef broth
- Salt and black pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground beef, onion, garlic, bread crumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
- Divide the mixture into 4–6 equal portions. Flatten each portion and place a cube of cheddar in the center. Wrap meat around cheese to form mini loaves.
- Place on prepared baking sheet.
- In a small bowl, mix ketchup, brown sugar, and mustard. Brush over the meatloaves.
- Bake for 25–30 minutes, until meat is cooked through and cheese is melted.
- Meanwhile, make the gravy: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes. Gradually add beef broth, whisking constantly. Simmer until thickened. Season with salt and pepper.
- Serve mini meatloaves hot with a spoonful of gravy on top.
