Ingredients

  • 1 lb ground beef
  • 4 oz cheddar cheese, cut into small cubes
  • 1/2 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup bread crumbs
  • 1/4 cup milk
  • 1 egg
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For the glaze:
  • 1/4 cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard
  • For the gravy:
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, onion, garlic, bread crumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  3. Divide the mixture into 4–6 equal portions. Flatten each portion and place a cube of cheddar in the center. Wrap meat around cheese to form mini loaves.
  4. Place on prepared baking sheet.
  5. In a small bowl, mix ketchup, brown sugar, and mustard. Brush over the meatloaves.
  6. Bake for 25–30 minutes, until meat is cooked through and cheese is melted.
  7. Meanwhile, make the gravy: Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1–2 minutes. Gradually add beef broth, whisking constantly. Simmer until thickened. Season with salt and pepper.
  8. Serve mini meatloaves hot with a spoonful of gravy on top.
