- 6 medium ripe tomatoes, halved
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
- 1 tbsp fresh basil, chopped
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- 1 garlic clove, finely minced (optional)
- 1 tsp balsamic vinegar (optional)
Instructions
- Preheat grill or grill pan over medium-high heat.
- Brush the cut side of each tomato half with olive oil and season with salt and pepper.
- Place tomatoes cut-side down on the grill and cook for 4–5 minutes until charred and softened.
- Flip and grill for another 2–3 minutes on the skin side.
- Remove from grill and arrange on a serving platter.
- Sprinkle with chopped herbs, garlic, and a drizzle of balsamic vinegar if using.
- Serve warm or at room temperature.
