Instructions
- In a medium bowl, whisk together almond milk, maple syrup, vanilla extract, cinnamon, nutmeg, and ginger until combined.
- Stir in chia seeds, grated carrot, raisins, and crushed pineapple if using. Mix thoroughly.
- Cover and refrigerate for at least 4 hours or overnight, stirring once midway to prevent clumping.
- Before serving, stir the pudding again to ensure even texture.
- Divide into jars or bowls and top with granola and chopped nuts just before serving.
