- 1 tbsp olive oil
- 1 tbsp butter
- 8 oz cremini or button mushrooms, sliced
- 2 garlic cloves, minced
- 1 tsp fresh thyme or rosemary, chopped
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
- 2 tbsp grated Parmesan or Gruyère cheese (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out puff pastry and cut into 6 squares or circles. Score a 1/2-inch border on each without cutting through.
- Place pastry on baking sheet and refrigerate while preparing filling.
- Heat olive oil and butter in a skillet over medium heat. Add mushrooms and sauté until golden and moisture has evaporated.
- Add garlic, thyme, salt, and pepper. Cook for 1–2 minutes, then remove from heat.
- Spoon mushroom mixture into the center of each pastry square, keeping within the scored border.
- Brush edges with beaten egg.
- Bake for 15–20 minutes, or until pastry is puffed and golden.
- Top with cheese and additional herbs if desired. Serve warm or at room temperature.
