Instructions
- Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- Peel, core, and slice apples. In a pan, sauté apples with 2 tbsp butter, brown sugar, lemon juice, and cinnamon until tender and caramelized. Set aside to cool.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream 1/2 cup butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Gradually add dry ingredients alternately with milk, beginning and ending with the dry ingredients. Mix until just combined.
- Pour batter into the prepared loaf pan and smooth the top.
- Arrange cooled caramelized apple slices over the batter, gently pressing them in.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
