- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 1 cup caramel sauce (homemade or store-bought)
- Optional: 2 tbsp heavy cream (if making caramel from scratch)

Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil to prepare for a water bath.
- Mix chocolate cookie crumbs with melted butter. Press into the bottom of the pan to form the crust. Set aside.
- In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and mix until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract until smooth.
- Pour the batter over the crust and smooth the top with a spatula.
- Place the springform pan in a larger roasting pan and fill halfway with hot water for a water bath.
- Bake for 55–65 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven, crack the door, and allow the cheesecake to cool inside for 1 hour.
- Refrigerate the cheesecake for at least 4 hours or overnight to fully chill and set.
- Once chilled, pour caramel sauce evenly over the top and spread gently with a spatula.
- Garnish with chocolate curls or shavings if desired. Serve chilled.
