  • 1 cup caramel sauce (homemade or store-bought)

Instructions

  1. Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil to prepare for a water bath.
  2. Mix chocolate cookie crumbs with melted butter. Press into the bottom of the pan to form the crust. Set aside.
  3. In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract until smooth.
  5. Pour the batter over the crust and smooth the top with a spatula.
  6. Place the springform pan in a larger roasting pan and fill halfway with hot water for a water bath.
  7. Bake for 55–65 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven, crack the door, and allow the cheesecake to cool inside for 1 hour.
  9. Refrigerate the cheesecake for at least 4 hours or overnight to fully chill and set.
  10. Once chilled, pour caramel sauce evenly over the top and spread gently with a spatula.
  11. Garnish with chocolate curls or shavings if desired. Serve chilled.
