Description

Burrata Pasta is a luxurious yet simple Italian-inspired dish featuring al dente pasta tossed in a fresh tomato sauce and topped with creamy burrata cheese. It’s a beautiful harmony of rustic flavors and elegant textures, perfect for any occasion.

Ingredients

Units Scale
  • 12 oz pasta (spaghetti, rigatoni, or orecchiette)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes or 1 can (14 oz) San Marzano tomatoes
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1/4 cup fresh basil leaves
  • 8 oz burrata cheese (2 small balls or 1 large)
  • 1/4 cup grated Parmesan cheese (optional, for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
  3. Add cherry tomatoes or canned tomatoes. Cook until softened and saucy, about 8–10 minutes. Use a spoon to gently crush the tomatoes if desired.
  4. Season with salt, black pepper, and red pepper flakes if using.
  5. Add the cooked pasta to the sauce and toss to coat. Add reserved pasta water a little at a time to help the sauce cling to the pasta.
  6. Divide pasta among plates. Tear burrata and place on top of each portion, letting it gently melt into the pasta.
  7. Garnish with fresh basil and Parmesan cheese if desired. Serve immediately.

Notes

  • Add spinach or arugula for extra greens.
  • Roast the tomatoes for deeper flavor before adding to the sauce.
  • Add grilled chicken, shrimp, or pancetta for a protein boost.
  • Add a swirl of pesto for a herby variation.
