- 12 oz pasta (spaghetti, rigatoni, or orecchiette)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups cherry tomatoes or 1 can (14 oz) San Marzano tomatoes
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
- 1/4 cup fresh basil leaves
- 8 oz burrata cheese (2 small balls or 1 large)
- 1/4 cup grated Parmesan cheese (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add cherry tomatoes or canned tomatoes. Cook until softened and saucy, about 8–10 minutes. Use a spoon to gently crush the tomatoes if desired.
- Season with salt, black pepper, and red pepper flakes if using.
- Add the cooked pasta to the sauce and toss to coat. Add reserved pasta water a little at a time to help the sauce cling to the pasta.
- Divide pasta among plates. Tear burrata and place on top of each portion, letting it gently melt into the pasta.
- Garnish with fresh basil and Parmesan cheese if desired. Serve immediately.
