For the Beef Tips:
- 1 1/2 lbs (680g) beef stew meat or sirloin tips, cubed
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups (480ml) beef broth
- 1/2 cup (120ml) red wine (optional, or use additional broth)
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
For Serving:
- 2 cups cooked white rice
- Fresh parsley or rosemary, chopped (for garnish)
Instructions
- Sear the Beef:
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Season the beef with salt and pepper. Sear the beef in batches until browned on all sides. Remove and set aside.
- Sauté Aromatics:
- In the same pan, reduce heat to medium and sauté the onions until softened, about 5 minutes.
- Add the garlic and cook for another 1–2 minutes.
- Create the Gravy:
- Sprinkle the flour over the onions and stir to coat. Cook for 1 minute to remove the raw flour taste.
- Gradually add the beef broth and red wine, stirring constantly to avoid lumps.
- Simmer the Beef Tips:
- Stir in the tomato paste, Worcestershire sauce, thyme, and bay leaf. Return the seared beef to the pan.
- Bring to a simmer, then reduce the heat to low. Cover and cook for 1 1/2–2 hours, or until the beef is tender and the sauce has thickened.
- Prepare the Rice:
- While the beef simmers, cook the rice according to package instructions.
- Serve:
- Remove the bay leaf from the beef. Serve the braised beef tips over a bed of rice, garnished with fresh parsley or rosemary.
Notes
- For added depth, sauté mushrooms with the onions.
- If the gravy is too thick, add a splash of broth to reach the desired consistency.
