For the Beef Tips:

  • 1 1/2 lbs (680g) beef stew meat or sirloin tips, cubed
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups (480ml) beef broth
  • 1/2 cup (120ml) red wine (optional, or use additional broth)
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste

For Serving:

  • 2 cups cooked white rice
  • Fresh parsley or rosemary, chopped (for garnish)

Instructions

  1. Sear the Beef:
    • Heat olive oil in a large skillet or Dutch oven over medium-high heat.
    • Season the beef with salt and pepper. Sear the beef in batches until browned on all sides. Remove and set aside.
  2. Sauté Aromatics:
    • In the same pan, reduce heat to medium and sauté the onions until softened, about 5 minutes.
    • Add the garlic and cook for another 1–2 minutes.
  3. Create the Gravy:
    • Sprinkle the flour over the onions and stir to coat. Cook for 1 minute to remove the raw flour taste.
    • Gradually add the beef broth and red wine, stirring constantly to avoid lumps.
  4. Simmer the Beef Tips:
    • Stir in the tomato paste, Worcestershire sauce, thyme, and bay leaf. Return the seared beef to the pan.
    • Bring to a simmer, then reduce the heat to low. Cover and cook for 1 1/2–2 hours, or until the beef is tender and the sauce has thickened.
  5. Prepare the Rice:
    • While the beef simmers, cook the rice according to package instructions.
  6. Serve:
    • Remove the bay leaf from the beef. Serve the braised beef tips over a bed of rice, garnished with fresh parsley or rosemary.

Notes

  • For added depth, sauté mushrooms with the onions.
  • If the gravy is too thick, add a splash of broth to reach the desired consistency.
  • Store leftovers in the fridge for up to 3 days.
