Ingredients
Crust:

1 1/2 cups graham cracker crumbs

2 tbsp sugar

1/3 cup melted butter
Filling:

24 oz cream cheese, softened

3/4 cup sugar

1/2 cup sour cream

1 tsp vanilla extract

1/3 cup blueberry jam or puree

2 eggs
-
1/4 cup rainbow sprinkles (plus more for topping)
Topping:

Whipped cream
-
Extra sprinkles

Fresh blueberries
Instructions

Preheat oven to 325°F (160°C). Mix crust ingredients, press into pan, bake 10 mins.

Beat cream cheese and sugar until creamy. Add sour cream, vanilla, and blueberry puree.

Beat in eggs one at a time. Stir in sprinkles by hand.

Pour over crust. Bake 50–55 mins, or until center is almost set.

Cool completely, then chill at least 4 hours or overnight.

Top with whipped cream, more sprinkles, and fresh blueberries. Serve chilled and colorful!
