Description

Bursting with sweet blueberry flavor and colorful sprinkles, this Blueberry Sprinkle Cheesecake is a vibrant twist on a classic. Creamy, fruity, and totally Instagram-worthy, it’s the perfect dessert for birthdays or just because!


Ingredients

Crust:

  • 1 1/2 cups graham cracker crumbs

  • 2 tbsp sugar

  • 1/3 cup melted butter

Filling:

  • 24 oz cream cheese, softened

  • 3/4 cup sugar

  • 1/2 cup sour cream

  • 1 tsp vanilla extract

  • 1/3 cup blueberry jam or puree

  • 2 eggs

  • 1/4 cup rainbow sprinkles (plus more for topping)

Topping:

 

  • Whipped cream

  • Extra sprinkles

  • Fresh blueberries


Instructions

  • Preheat oven to 325°F (160°C). Mix crust ingredients, press into pan, bake 10 mins.

  • Beat cream cheese and sugar until creamy. Add sour cream, vanilla, and blueberry puree.

  • Beat in eggs one at a time. Stir in sprinkles by hand.

  • Pour over crust. Bake 50–55 mins, or until center is almost set.

  • Cool completely, then chill at least 4 hours or overnight.

 

  • Top with whipped cream, more sprinkles, and fresh blueberries. Serve chilled and colorful!


Notes

  • Gently fold in sprinkles to avoid color bleeding.

 

  • Use freeze-dried blueberry powder for a deeper color & flavor hit.
