Description

A wholesome and hearty breakfast dish made with oats and fresh blueberries, baked to perfection. Ideal for meal prepping or serving a crowd.


Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped nuts (walnuts or pecans recommended)
  • 1 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 2 tbsp melted butter or coconut oil
  • 2 tsp vanilla extract
  • 1 1/2 cups fresh or frozen blueberries

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish.
  2. In a large bowl, combine oats, chopped nuts, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, maple syrup (or honey), egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in the blueberries gently.
  6. Pour the mixture into the prepared baking dish and spread evenly.
  7. Bake for 35–40 minutes, or until the top is golden brown and the oatmeal is set.
  8. Allow to cool slightly before serving. Serve warm or at room temperature.

Notes

  • You can use frozen blueberries; no need to thaw.
  • Store leftovers in the fridge for up to 5 days.
  • Great with a dollop of yogurt or a splash of milk when serving.
  • Can be made ahead and reheated in the microwave or oven.
