- 4 thick-cut salmon fillets
- 2 cups fresh spinach
- 4 oz cream cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp blackened seasoning (paprika, garlic powder, onion powder, cayenne, thyme, oregano, salt, pepper)
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat 1 tbsp olive oil and sauté the spinach until wilted. Add garlic and cook for 1 more minute.
- In a bowl, combine the cooked spinach with cream cheese and Parmesan. Mix until smooth.
- Slice a pocket into each salmon fillet without cutting all the way through.
- Stuff each salmon fillet with the spinach-Parmesan mixture.
- Rub the salmon with remaining olive oil and coat evenly with blackened seasoning.
- Place the stuffed salmon on a baking sheet and bake for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Drizzle lemon juice over the cooked salmon before serving.
Notes
- Sun-dried tomatoes can be added to the stuffing for extra flavor.
- Goat cheese can be used instead of cream cheese.
- Kale can replace spinach for a different texture.
- Pan-searing the salmon before baking creates a crispier exterior.
