Description

Blackened Salmon Stuffed with Spinach and Parmesan is a bold and creamy dish featuring spice-rubbed salmon fillets filled with a savory spinach-Parmesan mixture, then baked to tender perfection.


Ingredients

  • 4 thick-cut salmon fillets
  • 2 cups fresh spinach
  • 4 oz cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp blackened seasoning (paprika, garlic powder, onion powder, cayenne, thyme, oregano, salt, pepper)
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat 1 tbsp olive oil and sauté the spinach until wilted. Add garlic and cook for 1 more minute.
  3. In a bowl, combine the cooked spinach with cream cheese and Parmesan. Mix until smooth.
  4. Slice a pocket into each salmon fillet without cutting all the way through.
  5. Stuff each salmon fillet with the spinach-Parmesan mixture.
  6. Rub the salmon with remaining olive oil and coat evenly with blackened seasoning.
  7. Place the stuffed salmon on a baking sheet and bake for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Drizzle lemon juice over the cooked salmon before serving.

Notes

  • Sun-dried tomatoes can be added to the stuffing for extra flavor.
  • Goat cheese can be used instead of cream cheese.
  • Kale can replace spinach for a different texture.
  • Pan-searing the salmon before baking creates a crispier exterior.
  • Store leftovers in the fridge for up to 3 days.
