- 4 cod fillets
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder

- 1/2 teaspoon dried thyme

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped (optional)
- 4 medium potatoes
- 2 tablespoons olive oil
- Salt and pepper to taste (for fries)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Cut potatoes into wedges or matchsticks. Toss with olive oil, salt, and pepper. Spread evenly on the baking sheet and bake for 25–30 minutes, flipping halfway through.
- While fries bake, pat cod fillets dry.
- In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and pepper.
- Rub the seasoning mix onto both sides of each cod fillet.
- Heat a skillet over medium-high heat. Add a small amount of butter or oil and sear cod fillets for 3–4 minutes per side until cooked through and flaky.
- In a small saucepan, melt remaining butter over low heat. Add minced garlic and cook until fragrant. Stir in lemon juice and remove from heat.
- Serve blackened cod with a drizzle of garlic butter and crispy fries on the side. Garnish with chopped parsley if desired.
Notes
- Use a cast-iron skillet for best searing results.
- Thaw frozen cod completely and pat dry to avoid excess moisture.
- Adjust cayenne for more or less heat.
- Reheat fries in the oven or air fryer to maintain crispiness.
