- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup unsalted butter, melted
- Blackberry Layer:
- 2 cups fresh or frozen blackberries
- 1/3 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a bowl, mix flour, oats, granulated sugar, brown sugar, baking powder, and salt.
- Stir in the melted butter until the mixture forms soft crumbs.
- Press two-thirds of the crumb mixture into the bottom of the pan to form the crust.
- In another bowl, toss blackberries with sugar, lemon juice, and cornstarch.
- Spread the blackberry mixture evenly over the crust.
- Sprinkle the remaining crumb mixture on top.
- Bake for 30–35 minutes, or until the top is golden and the filling is bubbling.
- Cool completely before slicing into bars.
Notes
- Frozen blackberries work perfectly—no need to thaw.
- Add a pinch of cinnamon to the crumbs for extra warmth.
- Bars slice more cleanly after chilling for 1 hour.
- Substitute blackberries with raspberries or blueberries if desired.
