Description

This Blackberry & Blueberry Swirl Cheesecake is a stunning baked dessert with a creamy vanilla cheesecake base swirled with homemade blackberry and blueberry compote. A deliciously fruity twist on a classic cheesecake!

For the crust:

  • 2 cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted

For the cheesecake filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

For the berry swirl:

  • 1/2 cup blackberries
  • 1/2 cup blueberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice

Instructions

  • Make the crust:

    • Preheat oven to 325°F (163°C).
    • Mix graham cracker crumbs with melted butter and press into a pan.
    • Bake for 10 minutes.
  • Make the cheesecake batter:

    • Beat cream cheese and sugar until smooth.
    • Add eggs one at a time, then stir in vanilla and sour cream.
  • Make the berry swirl:

    • Cook berries, sugar, and lemon juice until softened.
    • Blend and strain, then swirl into cheesecake batter.
  • Bake and cool:

    • Bake for 50-55 minutes, then let cool.
    • Chill for 4 hours before serving.
