- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or thawed frozen)
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup diced red bell pepper
- 1 jalapeño, seeded and finely chopped
- 1/3 cup chopped fresh cilantro
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/2 tsp cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, corn, tomatoes, red onion, bell pepper, jalapeño, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the salsa mixture and toss gently to combine.
- Adjust seasoning to taste.
- Refrigerate for at least 20 minutes to allow flavors to meld before serving.
Notes
- Add avocado right before serving for creaminess.
- Use fresh grilled corn for extra flavor.
