- 1 1/4 cups granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup rainbow sprinkles (plus more for topping)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, beating until well combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the sprinkles evenly.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
- Press a few extra sprinkles onto the tops for decoration.
- Bake for 10–12 minutes or until the edges are just beginning to turn golden.
- Allow cookies to cool on the pan for 5 minutes before transferring to a wire rack.
Notes
- Don’t overbake to keep the centers soft and chewy.
- Chill dough for 20–30 minutes if it’s too soft to handle.
- Use jimmies-style sprinkles, not nonpareils, to avoid color bleeding.
- Store in an airtight container for up to 5 days at room temperature.
