Description

Soft fruit-filled dessert bars featuring mixed berries nestled between a buttery shortbread base and crumbly streusel topping.


Ingredients

  • All-purpose flour
  • Rolled oats (optional for texture)
  • Brown sugar
  • Granulated sugar
  • Salt
  • Unsalted butter, cold and cubed
  • Fresh or frozen mixed berries (strawberries, blueberries, raspberries)
  • Lemon juice and zest (optional)
  • Cornstarch (for filling thickening)

Instructions

  1. Preheat oven to 350°F. Lightly grease or line an 8×8-inch baking pan.
  2. In a bowl, combine flour, oats (if using), sugars, and salt. Cut in cold butter until mixture resembles coarse crumbs. Reserve about 1 cup for topping. Press the remainder into the bottom of the pan to form the base.
  3. Prepare berry filling: toss berries with sugar, cornstarch, lemon juice, and zest.
  4. Spread filling evenly over the base. Sprinkle reserved crumble on top.
  5. Bake 35–40 minutes until topping is golden and filling bubbles.
  6. Cool completely before slicing into bars.

Notes

  • If using frozen berries, no need to thaw them. Just note that the baking time may slightly extend.
  • For a nutty version, add chopped walnuts or pecans to the crumble mixture.
  • If you prefer a classic shortbread texture, omit the oats in the crumble.
  • To make these vegan, substitute plant-based butter and ensure the sugars are vegan-friendly.
  • These bars freeze well for up to 3 months—wrap tightly before freezing and thaw at room temperature before serving.
